Rain Forest Fruit Bars Recipe

Enjoy life's cookies for everyoneThis is a nice treat for those kids who like fresh fruit—or for those parents who want their kids to eat more fresh fruit!

  • Yield: 2 dozen

Ingredients

For Crust
  • 3 cups (220 g) Enjoy Life Perky’s “Nutty” Rice Cereal
  • ½ 2 cup (120 ml) vegetable oil
  • ¼ cup (50 g) superfine sugar
  • ¼ cup (85 g) honey or (60 ml) pure maple syrup
  • ½ teaspoon (3 g) salt
  • ¼ cup (30 g) Bob’s Red Mill tapioca flour
For Orange Filling
  • 0.33 cup (67 g) Spectrum Organic Shortening
  • 2½ cups (300 g) powdered sugar
  • ¼ cup (60 ml) orange juice
  • 1 tablespoon (5 g) orange zest
For Topping
  • 1 peach, sliced into small pieces
  • ½ cup (87 g) fresh diced mango
  • ½ cup (85 g) sliced strawberries
  • 1 kiwi, peeled and sliced
  • ½ cup (73 g) fresh blueberries
  • 1 tablespoon (15 ml) lemon juice
  • 1 tablespoon (13 g) superfine sugar
  • 1 cup (75 g) Enjoy Life Perky’s “Nutty” Rice cereal
How to Make It
  1. Preheat oven to 325°F (170°C, or gas mark 3).
  2. To Make the Crust
  3. Place cereal in food processor and process until mixture reaches the consistency of cornmeal. Add remaining crust ingredients and pulse until cereal crumbs are well coated. Press mixture into a 9-inch (23-cm) square baking pan.
  4. Bake for 10 to 15 minutes. Let cool.
  5. To Make the Orange Filling
  6. Combine all filling ingredients in a food processor and pulse until smooth. Spread over cooled crust.
  7. To make the Topping
  8. Combine the fresh fruit in a large bowl. Pour the lemon juice and sugar over fruit and gently stir. Spoon fruit mixture over orange filling. Sprinkle 1 cup cereal over bars. Cover and place in the refrigerator to chill. Cut into bars.
