Noodles with Thai Peanut Sauce

Cooking with One Chef One CriticGreg Malone sent us this recipe. He uses it frequently and believes it to be one of the tastiest things anyone can eat. Given my own love for peanut butter, he won’t get any argument here.

  • Yield: 4 Servings

Ingredients

  • ¾ cup (185 ml) roasted peanuts
  • 3 cloves fresh garlic
  • 2 tbsp (30 ml) soy sauce
  • 2 tbsp (30 ml) rice vinegar
  • 1 tbsp (15 ml) honey
  • 1 tbsp (15 ml) mustard
  • 1 tbsp (15 ml) cayenne
  • 1 tbsp (15 ml) protein seasoning (optional)
  • ¼ cup (60 ml) water
  • 1 tsp (5 ml) roasted sesame oil
  • cooked rice noodles
How to Make It
  1. Put all ingredients except noodles in blender and blend. Pour mixture into a saucepan and warm on medium.
  2. Stir frequently for 5 to 10 minutes until sauce is bubbling hot and changes colour.
  3. This sauce can be served over rice noodles with pan-fried tofu and side of broccoli.
