This eggy dish can serve as breakfast or lunch. Or, you can make mini-quiches as appetizers. Either way, they’ll go fast.

  • Yield: 6 Servings
  • Cooking Time: 45 Minutes

Ingredients

  • 1 thawed frozen pie crust
  • 8 bacon slices
  • ¾ cup shredded Gruyere cheese
  • 1 small diced onion
  • 1 cup sliced mushrooms
  • 4 beaten eggs
  • 1½ cups half and half
  • Salt and pepper to taste
  • ¼ tsp nutmeg
How to Make It
  1. Preheat the oven to 350 degrees.
  2. Bake the pie crust for 5 minutes to prevent it from becoming soggy.
  3. While the pie crust is baking, fry the bacon in a skillet for 10 minutes.
  4. Drain the bacon on a paper towel and crumble.
  5. Place the cheese, onion mushrooms and bacon in the pie shell.
  6. Wisk the eggs and half and half and season with salt, pepper and nutmeg.
