Efo riro recipe

Efo riro is a spinach-based stew traditionally prepared and named by the Yoruba tribe in Nigeria. The word “Efo” means vegetables and “riro” means mixed in. Most recipes use spinach and kale as the vegetables.

Ingredients

  • 2 cups chopped spinach
  • 1 tablespoon tomato paste
  • ¼ cup vegetable oil
  • 1 medium onion
  • 1 small scotch bonnet pepper
  • 1 teaspoon seasoning powder of choice or equivalent
How to Make It
  1. Add onions and pepper to a food processor and use s-blade attachment to mince onions and peppers.
  2. Place a pot on medium heat and add oil.
  3. Add chopped onions and pepper to hot oil.
  4. Add seasoning powder and fry for 2 minutes.
  5. Add tomato paste and fry with onions and pepper for approx 3 – 5 minutes.
  6. Add spinach and mix together with peppers several times until cooked (approx 5 minutes).
  7. Serve with a swallow or cooked rice.
