- 4–6 heads of garlic
- Olive oil, to coat
- Salt and freshly ground black pepper, to taste
How to Make It
- Preheat oven to 400°F.
- Peel off the outer skins of the garlic and expose all layers of the garlic. Cut 1⁄4" off the top of the garlic. This will help the roasted garlic cloves come out more easily.
- Drizzle olive oil all over the exposed cloves and the skin and season with salt and freshly ground black pepper. Wrap each head in foil and place directly into the oven. Roast for 1 hour.
- Pop the roasted cloves out and use as is or purée.
