Ingredients

  • 1¼ cups self-rising flour
  • 1¼ cups self-rising white cornmeal
  • 1 tbsp sugar
  • ½ tsp seasoned salt
  • ½ tsp garlic powder
  • ¼ tsp freshly ground pepper
  • 1 cup buttermilk
  • ½ cup whole kernel corn
  • 1 large egg, lightly beaten
  • 2½ cups finely chopped onion
  • 1 plum tomato, finely chopped
  • Vegetable oil
How to Make It
  1. Combine first 6 ingredients in a large bowl; stir well. Combine buttermilk, corn, and egg; add to dry ingredients, stirring just until moistened. Stir in onion and tomato.
  2. Pour oil to depth of 2 inches into a Dutch oven; heat to 375°. Drop batter by rounded teaspoonfuls, in batches, into hot oil. Fry 2 minutes or until golden, turning once. Drain on a wire rack over paper towels.
