Sticky date Pudding recipe

Ingredients

  • 2 cups (250 grams) pitted dates
  • 2 eggs
  • coarsely chopped
  • 1½ cups self raising flour
  • 1 teaspoon bi-carb soda
  • 1½ cups boiling water
  • Caramel Sauce
  • 1 teaspoon vanilla essence
  • 1 cup brown sugar
  • 100 grams butter, softened
  • 300 ml thickened cream
  • ¾ cup brown sugar
  • 100 grams butter
How to Make It
  1. Place dates and bi-carb soda in a bowl. Pour boiling water over the top and sit for 10 minutes.
  2. In a bowl, combine butter, sugar and vanilla. Add eggs, one at a time, stirring well after each one. Fold through date mixture and flour until well combined.
  3. Spoon mixture into a small, well-greased camp oven and bake for 40-45 minutes, or until a skewer comes out clean.
  4. Meanwhile, combine sauce ingredients in a saucepan over a medium heat, stirring until boiling. Reduce heat and simmer for 2 minutes.
  5. Prick pudding all over with a fork and pour half the caramel sauce over the top. Sit for five minutes. Serve and pour remaining sauce over slices.
