Grilled potato salad recipe

Ingredients

For the Potatoes
  • 500 g small coloured potatoes
  • 2 tbsp olive oil
  • 1 tsp coarse sea salt
For the Dressing
  • 1 avocado
  • 6 tbsp white wine vinegar
  • 6 tbsp olive oil
  • 1 tbsp mustard
  • 40 ml almond milk
  • 1 tsp salt
  • 1 lemon juice
  • ½ tsp black pepper
Extras
  • 1 spring onion
  • 100 g rocket
How to Make It
  1. Boil the potatoes and leave them to cool. Halve the potatoes, mix them with the olive oil and salt, and grill them on their cut side over indirect heat for 8–10 minutes.
  2. For the dressing, combine all the ingredients in a blender and process until smooth.
  3. Mix the grilled potatoes with the dressing.
  4. Gently mix in the rocket and cut the spring onion into fine rings. Scatter them over the salad.
