  • Yield: 8 Servings

Ingredients

  • 1 tablespoon olive oil
  • 2 cups fresh spinach
  • ½ medium onion, chopped
  • 6 large eggs
  • 1 cup milk
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 cup chopped cooked ham
  • 1½ cups grated Cheddar cheese
  • 1 unbaked Perfect Piecrust
How to Make It
  1. Preheat the oven to 375°F.
  2. In a medium skillet set over medium-low heat, heat the olive oil. Add the spinach and onion, and cook, stirring, until just tender, about 3 minutes. Transfer to a plate.
  3. In a medium bowl, whisk together the eggs, milk, salt, and pepper until light and foamy. Stir in the cooked spinach and onion along with the ham and cheese. Pour the filling into the pie shell.
  4. Bake until the filling is set and the top is lightly browned, 35 to 45 minutes. Remove the dish from the oven and let the quiche rest for 5 minutes before cutting.
