Onion soup recipe



  • 2 pounds red onion
  • 6 cups vegetable stock
  • Olive oil
  • Salt and pepper
  • 4 slices brown bread, toasted
  • Grated parmigiano
How to Make It
  1. In a pot, warm 5 tablespoons of olive oil. Thinly slice the onions, add to the pot and sauté briefly. Add 2 tablespoons of water, and cook over low heat for about 30 minutes.
  2. Season with salt and pepper, add the broth. bring to a boil, cover, and cook for another 30 minutes.
  3. Place the bread in a bowl, cover with the onion mixture, and sprinkle with the cheese. Set aside to rest for a couple of minutes before serving.
