Potatoes are a great side dish and will go with pretty much any main course you prepare. These potatoes are fantastically delicious. If you are not a fan of pesto, that is alright as these do not have a strong pesto taste.

- 2 lb potatoes (red works best)
- 2 tbsp pesto
- 3 tbsp Parmesan cheese
How to Make It
- Preheat the oven to 400 degrees F. Then toss the cubed potatoes and the pesto in a large bowl. Arrange the potatoes one a baking sheet and then season with salt and pepper.
- Bake in the oven for 20 minutes, sprinkle with parmesan cheese and cook for another 10 minutes. Best served warm.
